What does remember this device do
Short answer: tick that box and Sarrai won't ask for a code on that device for thirty days. It's off by default, because on a shared computer this is exactly what you don't want.
The thirty days are hard
That period doesn't shift when you sign in during it. Sign in today and again three weeks later and the counter simply keeps running, so after thirty days you'll get a code again regardless. That isn't a fault.
There's no list of remembered devices
The remembering hangs off your account, not off a list of devices. So there's nowhere to see which devices are currently remembered, and you can't revoke a single one.
What there is: a Forget remembered devices button on your security page, which revokes them all at once. Handy when you've sold or lost a laptop. That button also signs you out of your other sessions, because both hang off the same key.
Two other actions do the same thing: turning off your two-step verification and re-pairing your authenticator. That's not a side effect to worry about, it's the same key changing.
When you'd rather leave it off
On your own laptop or phone this is simply convenient. On a shared computer you're handing someone else a month of access, because your password is then all that's left in between.
Sign in with a recovery code and your device is never remembered, even if you tick the box. That's deliberate too: you use a recovery code precisely when something went wrong.
